Tío Pepe is the most famous fino sherry in Spain, made by González Byass at their bodegas in Jerez de la Frontera since 1835.
Palomino Fino grapes aged under a veil of flor in century-old soleras, with that dry, sharp and saline character so typical of Jerez fino sherries.
It takes its name from José Ángel y Vargas, the real "Uncle Pepe" who taught the trade to Manuel María González.

🍾 Why is Tío Pepe Spain’s most famous fino sherry?
It was 1835 when a young Manuel María González Ángel, just 23 years old, launched into the wine business in Jerez de la Frontera. The man who taught him all the secrets of the trade was his maternal uncle, José Ángel y Vargas — and in gratitude, Manuel María named his first solera "Solera del Tío Pepe" ("Uncle Pepe’s Solera"). The name stuck forever.
In 1844 English merchant Robert Blake Byass joined the business, giving rise to González Byass and kicking off an expansion that today takes Tío Pepe to more than 115 countries. In 1886 it became one of Spain’s first registered trademarks.
🍇 How is this Jerez fino made?
Tío Pepe is made from Palomino Fino grapes, aged under the "flor" — a layer of yeast that protects the wine from oxygen — within the solera and criadera system for around 4 years.
The result is a pale straw-coloured wine, very dry, with sharp, delicate aromas reminiscent of almonds and chamomile, and that saline touch so typical of Jerez.
