Sowing begins in May, once water temperatures reach 20°C. The paddies remain flooded throughout summer — a natural technique that suppresses weeds and attracts thousands of migratory birds to the Natural Park. Harvest takes place between late September and October. Just one harvest per year means lower yields but extraordinary concentration of flavour in every grain.
