Francisco Tejedor García founded El Zagal in 1905 in Felanitx, Mallorca. What started as a small family workshop is now four generations strong, with the same recipe and no compromises. Specialisation, tradition and quality: three words that at El Zagal are not a tagline – they are the way the company works every single day.

Their sobrasada is produced under the Protected Geographical Indication "Sobrasada de Mallorca", which is not just a label. It is the guarantee that the product meets strict requirements of origin, ingredients and process that are non-negotiable. El Zagal is also the only charcuterie company on the island certified under both IFS and BRC food safety standards.

What makes El Zagal Sobrasada different

Sobrasada is a cured sausage made from pork seasoned with paprika. Simple on the surface, but hard to get right. El Zagal only makes sobrasada, nothing else. Over a century of focus on a single product is what produces a smooth, spreadable texture and a flavour like no other.

The range goes from the Traditional Sobrasada, the most recognised, to the Black Mallorcan Pig Sobrasada, made from an indigenous breed highly prized in local cuisine. They also produce spicy, truffle and honey varieties, each with its own character.

A company that never stands still

Despite over a century in business, El Zagal keeps moving forward. Their Felanitx facilities include an in-house laboratory for continuous quality control of raw materials and processes. They have installed a photovoltaic plant to reduce their carbon footprint. And every year they set new quality targets they must meet.

All of this so that when you open a jar of El Zagal Sobrasada and taste it, you sense that there is more behind it than just a recipe. There is a story.
