The ventresca is the most prized cut of bluefin tuna. Balfegó hand-cuts it in L'Ametlla de Mar, from tuna raised in the Mediterranean.

Deep pink colour and a melt-in-the-mouth texture, thanks to organic arbequina olive oil and Añana salt, with no preservatives.

🐟 A ventresca unlike the rest

Not all ventresca is created equal. Balfegó's is made from bluefin tuna (Thunnus thynnus) raised in the Mediterranean and packed in organic arbequina extra virgin olive oil and Añana salt, two ingredients chosen to let the fish's own flavour lead, without drowning it in acidity or salt.

The result is a juicy, melt-in-the-mouth conserve, quite different from the albacore ventresca usually found on supermarket shelves.

🌊 From L'Ametlla de Mar to your table

Balfegó is a family-run company from L'Ametlla de Mar (Tarragona), now led by the fifth generation, with a long-standing dedication to bluefin tuna, from raising the fish in open-sea pens to turning it into canned products.

The tuna are fed exclusively on blue fish and harvested using the Yake method, a technique developed by Balfegó to minimise stress on the fish while preserving the texture and natural qualities of the meat.

🥂 How to enjoy it the Bluefin Tuna Ventresca Balfegó 

Ventresca tastes best cold or at room temperature, so the oil doesn't mask its flavour.

It's excellent on a slice of toasted bread with a drizzle of oil, on top of a seasonal tomato salad, or simply on its own as a tapa with a few olives.

🍷 A pairing that works 

Its richness calls for a crisp white wine with good acidity, such as Albariño Pazo de Señorans, which balances the tuna's fat beautifully.

For a more casual aperitif, a vermouth like Vermouth Dos Deus also works well.

🌿 The salt with a story

Añana salt comes from the Valle Salado de Añana, a site in the Basque Country with over 6,500 years of salt-making history.

The project behind it reinvests all its income into restoring and preserving the valley itself, so every tin plays a small part in keeping that heritage alive.
