Saffron Verdú Cantó - PDO La Mancha 1 g
Verdú Cantó Saffron, pure saffron threads with Protected Designation of Origin La Mancha, grown in Castilla-La Mancha and hand-picked thread by thread, no blends, no colouring.
Deep red threads, warm floral aroma, a slightly bitter edge that turns rice and stews an even golden colour thanks to its high crocin content.
Verdú Cantó has been selecting saffron since 1886 in Novelda, the historic heart of Spain’s saffron trade, now in its fourth generation.
1 g glass jar, just the right amount to season several paellas, rice dishes or traditional stews.
🌾 Why is this saffron different?
Not all the saffron sold in Spain comes from La Mancha, and not everything grown in La Mancha meets the requirements of the Protected Designation of Origin “Azafrán de La Mancha”, granted in 2001, which covers production in just nine districts across the provinces of Albacete, Ciudad Real, Cuenca and Toledo.
The flower is picked by hand between late October and early November, always at dawn, and the threads are separated that same day in a process called monda. What sets this saffron apart is how it’s dried: instead of sun-drying, it’s slow-roasted over fire, the traditional method from La Mancha that gives it more aroma, more colour and a higher safranal content. That’s why PDO rules require it to be sold only as whole threads, never ground.
🏺 Who’s behind this saffron?
Behind every jar is Verdú Cantó, a family business founded in 1886 by José Verdú in Novelda (Alicante), a town that for generations was the great trading hub of Spanish saffron. The story goes that the founder rode on horseback through the fields of La Mancha to personally pick the best harvests, long before any designation of origin existed to guarantee it.
That trade has passed from parents to children for four generations, and in 2026 the Verdú family marks 140 years devoted exclusively to saffron. In our spices and seasonings section, we wanted that family story, not a generic brand, to be the gateway to Spanish saffron at LoveGour.
👃 What does La Mancha saffron smell and taste like?
The aroma is warm, earthy and slightly musky, with notes of honey and dried flowers, and a barely perceptible metallic edge underneath. On the palate it’s somewhat bitter, never sweet, and that combination is exactly what sets it apart from cheaper imported saffron, which tastes far flatter.
The colour, though, is what you notice first: a single thread is enough to turn an entire dish golden yellow thanks to crocin, saffron’s natural pigment, while picrocrocin brings that bitter note and safranal is behind much of its aroma.
🍚 How do you use it in the kitchen?
10-12 threads are enough for a dish for four: the trick is to lightly toast them for a few seconds in a dry pan, then let them infuse in hot stock for a few minutes before adding them to the rice, rather than boiling them directly, so you don’t lose any aroma.
It’s an essential ingredient in our Ebro Delta bomba rice, but also in:
- Valencian paella and black rice
- Fideuá and brothy fish rice dishes
- Risottos and seafood soups
- Meat stews and saffron-scented rice pudding
A good sofrito with extra virgin olive oil is the other half of the equation: without a good base, not even the best saffron in the world can save a rice dish.
🎁 Why does it make a good gourmet gift?
A gram of saffron might not sound like much, but it takes hundreds of flowers, picked by hand one by one, and it goes a lot further than its size suggests. The jar is small, but what’s inside it —more than a century of craft and a designation of origin that very few spices in the world can claim— makes it one of those gifts people remember.
In La Mancha they say saffron isn’t grown, it’s inherited: generation after generation, thread by thread.
